GF Orange Marmalade Bundt Cake

Our friends think fruit shouldn’t have anything to do with a cake. We proved them wrong with this sweet spiced bundt cake.

How to Make


For Cake

3 cups
Birch Benders Gluten Free Pancake Mix
1 cup
Fresh Squeezed Orange Juice
1/2 cup
Vegetable Oil
1 cup
Butter, softened
1/4 cup
1/2 cup

For Glaze

1/2 cup
Whole Cloves
1/2 cup
1 cup
Confectioners Sugar
1 handful
Crushed Pistachios, for garnish
  1. Preheat oven to 350° F, and lightly grease your favorite 10-inch bundt pan
  2. In the bowl of stand mixer, cream together butter, oil, juice, and 1/2 cup marmalade.
  3. Beat in eggs.
  4. Stir in Birch Benders, in three batches, combining fully between batches.
  5. Pour into bundt pan.
  6. Bake 45-50 minutes, until a toothpick inserted in the center comes out clean.
  7. Let cool 5-10 minutes in pan before removing to a rack to cool. We recommend placing the rack upside down on the top of the pan, and flipping over the pan and rack in tandem for smoother transition.
  8. While the cake cools, combine water, cloves and remaining marmalade in a sauce pan over medium low heat, stirring occasionally, forming a syrup - about 6 minutes.
  9. Remove cloves before whisking in confectioners sugar.
  10. Pour glaze over mostly cooled cake, and garnish with pistachios if desired.
So moist and bright you wont believe it’s gluten free.
