How to Make

Ingredients
3 cups
Birch Benders Buttermilk Pancake and Waffle Mix
3 cups
Apple Cider
8 tbsps
Butter 1 stick
2
Eggs large
2/3 cup
Brown Sugar
2 quarts
Peanut Oil
1/2 cup
Turbinado Sugar
3 tbsps
Cinnamon

Directions
  1. In a heavy-bottomed sauce pan, combine butter and cider. Bring to a rapid boil and reduce by half, about 15 minutes.
  2. Refrigerate to cool. Set aside 1/2 cup reduced cider for glaze. In a large bowl, combine cooled cider with eggs and brown sugar. Fold in Birch Benders.
  3. Refrigerate 1 hour.
  4. In a dutch oven or deep fryer, bring peanut oil to 325°F.
  5.  Using a small cookie scoop or two tablespoons, scoop dough into hot oil, a few at a time. Cook 2-3 minutes on each side, turning carefully and removing once golden brown all the way around.
  6. Set on paper towels to drain and cool slightly.
  7. Combine turbinado sugar and cinnamon in a shallow dish. Dip fritters in remaining cider glaze, and roll in cinnamon sugar mixture. Serve immediately.
